Why Does an Imitation Fly Work?

Why?  When you look at the previous post of a mayfly from below, why do trout take this pattern, or any other pattern that really does not look like that photo?

Trout suck in bunches of weeds from time to time to get cress bugs, they also have been filmed taking little sticks and spitting them out....I think, and have no proof, but what I just said, that they find food sources and just take opportunities to eat.....if they are comfortable and don't know you are there, they eat more readily, if they know you are there they become more selective, so basically, I don't know, and neither does anyone else..:)
